“Find the Flaw” in our imperfectly delicious produce — it’ll shock you to see the fruits and vegetables that traditionally go to waste because they don’t meet stringent “beauty” standards or have characteristics that make them less desirable in the marketplace. Learn how Bon Appétit is working with farmers to identify and rescue this produce and how we use it in the café.
Vegetable butchery demonstration where you will learn the proper techniques for prepping produce so that you use all the edible parts of the vegetable or fruit. Harness these skills to fill your plate and fatten your wallet while combating food waste and helping the planet!
